Welcome to my very first food blog! No really, I've never blogged about food before. In truth, I never really gave food much thought, until recently.
I see food posts on social media all the time and I'm particularly impressed with the amount of dedication to health all you Demimondaine Goddesses have become. I see you!
In reality, I've always been mindful of my eating habits and food choices. If you've been following me on Instagram, then you might have noticed my stories often include healthy green smoothie posts and even post workout pics. Lately, I have been including my "what's for dinner" quick + healthy delicious meals in hopes to inspire more warrior mama's who are also pressed for time, to treat yourself and your body with easy to make dishes, packed with vitamins and nutrients. Say bub-bye to pre-packaged, GMO infused, processed food and say hello to real whole foods.
As a busy Mom to 3 kids, Social Influencer and Authoress, there isn't much time in my day to be cooking in the kitchen, let alone choosing foods that are both healthy and quick to make. The summer is always a struggle for time. I mean who wants to be cooking in the kitchen all day when the sun is shining, the pool is calling and the kids want all your attention...oh, and the chores!! The never ending list of things that need to get done.
I still order pizza and chinese food, and still enjoy restaurant dining. I just don't do it often! My golden rule is 80% healthy 20% optional food choices. This methods allows me and my kids the flexibility to grab something on the road if I just can't make it home for a healthy meal. Like seriously, my kids extra curricular activities have me playing taxicab driver more than homemaker (but I make it work).
I recently made my health my main priority for many reasons. The first of course, being for my kids and the second is for the health of myself and my business. If I can't thrive then how can I expect my business to? Without good health and healthy food habits, everything else falls apart. This statement makes me sad on so many levels. It's time to put your health first! Take yourself off the list of lasts and move yourself to the front of the line. Get first in line with your health, your energy and your time. It's easier than you might think!
Anyone who knows me personally is aware that I do not like my time wasted! I may have even posted about my time being wasted recently out of frustration! (totally off topic but worth the mention). It's on my Facebook Page, go check it out if you want. Anyhow, I thought it would be appropriate and fitting to share one of my go-to quick + healthy dishes. Not only is this dish packed with power house greens, it's also so simple to make, you'll want to make it a few times a week! If you're super stuck for time, you can purchase the ingredients pre-sliced, cubed and diced, saving you even more time! All you will need to do it throw it all together, warm it up and present it on some of your favourite dinnerware! Because, let's get real here, food always taste the best when the presentation is on point!
Allow me to present to you...
Zucchini + Avocado Pasta
Buy enough zucchini to feed the number of your guests/family. I use 1 small zucchini per person. You can purchase pre-spiralized zucchini at Food Basics, or you can pick them up whole at any local grocery store. I buy mine whole and spiraize them at home (it takes an extra 5 minutes) but when I'm in a super huge rush, I will buy them already spiraled.
Buy 1-4 avocados (depending on the number of people you are serving). One avocado is good for up to 4 servings. After learning of all the good fat and health benefits of avocado I always make sure I stock up. Scoop out the avocado into a food processor or blender. I prefer my blender (it's easier to clean!) Because saving on time is about easy clean up too. TIP: Instantly ripen an avocado by piercing it with a fork and microwaving it for 30 seconds on low to medium heat. Repeat 30 second intervals as needed. Add 2 tsp of lemon juice, 1-3 small garlic cloves, salt & pepper (optional). Blend all ingredients into a smooth paste and set it aside.
Drizzle some olive oil in a saucepan and toss spiralized zucchini for about 3-5 minutes until al dente. Be sure not to over cook the zucchini or else they will wilt. Slightly crunchy is best. Add the blended avocado mixture and continue to toss until everything is mixed well and all the zuchinni is coated. Accessorize your dish with freshly grated parmesan cheese.
Present your masterpiece on your best dinnerware and wow everyone at the dinner table. They will think you worked endlessly preparing this dish just for them!
